Pine Needle Syrup Reciepe

This just sounds yummy to me. I just hope I can fine fresh pine needles top make it from. Let me know if you try it and how it turns out.

It’s a Scandinavian thing, really it is! Drive down the road in Denmark during pine needle picking season and you’ll see Danes pulled off to the side of the road foraging pine needles.  Seem strange? No stranger than juniper berries or rosemary! I got turned on to this delight several years ago when I attended my first Nordic Culinary conference in Seattle. I loved it and immediately my brain went to work on what I could do with it.

My first thought went to cocktails (of course it did)…it is a simple syrup, and my mind danced with baked good ideas (still working on that one), I even did a pork belly glazed with it (which was freaking good, but then again, it was pork belly).

This is a very seasonal offering, you only pick the bright green freshly grown new pine needles.  I like to pick mine at the cabin, it makes for easy foraging (yep, I am that lazy).  There are side effects, when you pick the new growth you stunt the tree’s growth.  I am careful to not pick all off of one tree or all on one side.  We happen to have some young trees that are too close to our cabin, they need to be cut down for fire safety, in the mean time I happily stunt their growth.

After that it’s just a matter of making a simple syrup and steeping the pine needles for 12 to 24 hours.  I like to add crushed juniper berry or rosemary (sometime both) to mine for a more complex savory flavor.

Pine Needle Syrup

Yields 2

Ingredients

  1. 1 cup organic granulated sugar
  2. 2 cups water
  3. 2 to 4 cups foraged pine needles, rinsed
  4. 1/4 cup crushed juniper berries (optional)
  5. 1 ounce rosemary sprigs (optional)

Instructions

  1. In a medium saucepan bring water and sugar to a boil, stirring occasionally. Add pine needles, juniper and/or rosemary if using. Turn off heat and let simmer 12 to 24 hours.
  2. Strain well in clean jars. Store covered in the refrigerator up to 3 months.

What being a Pagan Witch means to Me?

When I began practicing witchcraft is was just to do spells to try and change things in my life it wasn’t a spiritual walk. As time went on and I studied with first a coven and then as a solitary my views changed. I saw it as a way to help others not just myself. Slowly over the years I came more and more to the spiritual aspect of it until the spiritual overtook the magickal part. The spiritual part started awakening abilities that I was born with.

I have been a spirit talker since about the age of three years old and guide by my mom who also was born with this ability. It was very scary this first time I saw and talked with the spirit of my paternal grandfather who had crossed many, many years before I was even thought of. My mom came in and told my grandpa he should have come to her again first and she would have introduced us before he came directly to me.

You will need the following items for this spell:

1 Glass plate or bowl

Some salt (depending on how big bowl/plate is.It should cover the bottom with a thin coating)

REAL small silver charm/jewelry

2 candles

2 small mirrors

1 cup of water

Casting Directions for ‘Summon and be in Touch with your Spirit Animal’

Step 1: Know your spirit animal. You can take a quiz or look it up, but usually what you feel in your gut is the most accurate. If you do n’t know, here is a fantastic quiz.

Step 2: Know about it. Research the animal for a little bit, maybe 5 minutes.

Step 3: Light the two candles.

Step 4: Take the bowl or plate and fill it with a thin layer of salt. Put the two candles on either side of the bowl or plate, on it’s left and right.

Step 5: Make a hole in the middle of the salt about 3 cm. wide and tall. Make 7 even beams in the salt coming out from the circle.

Step 6: Pour the water from the circle, and then watch it flow into the rays. Pour until they are full, but do not overflow.

Step 7: Take the charm or jewelry and put it in the center of the ring, which should be filled with water.

Step 8: Place the mirrors next to the candles, so they are closer to the bowl/plate compared to candles. They ought to reflect the image of the jewelry or charm.

Step 9: Say:

Myself is yet failing me
Make it not so, ________ (say your spirit animal)
Show me the right path
Light the way to a better self

Step 10: After saying that, blow out the candles one by one from right to left. The mirror on the right is yourself, and the one on the left is the animal.

Step 11: Ask the question or simply talk in the mirror on the left to communicate with the creature. If it responds, it is going to show you from the ideal mirror. Do not be pushy. Or else.

Jasper has many magickal properties but protection is one of its strongest energies. Simply select the colour of jasper that corresponds with your magickal intention:

  The Spell:

Use equal amounts of whole cloves and Witch’s Black Salt and mix them together in a small bowl.

Place the jasper in the bowl and cover it with the cloves and Witch’s Black Salt mixture.
