The greens are also delicious sources of potassium in a salad. Pick only the younger leaves and wash thoroughly. Word of caution: don’t go picking dandelion leaves wherever they appear to be growing! Odds are good that someone has already seen them and soaked them in some poison (herbicide) or another.
